Cinnamon Basil Peaches

Preparation Time: 15 minutes
Number of Servings: 10 (3 rice cakes per serving)

Ingredients:
1 fresh peach, diced or one 15 oz. can peaches (juice packed), drained, diced
¼ teaspoon ground cinnamon
¼ teaspoon lemon zest
1 teaspoon fresh basil, finely diced
5 tablespoons (2.75 oz.) Neufchatel cheese*
30 mini rice cakes
*Neufchatel cheese is similar to cream cheese but contains 1/3 less fat. Look for Neufchatel in the refrigerated section where regular cream cheese is displayed.

Preparation:
1. Mix peaches, cinnamon, lemon zest and fresh basil.
2. Spread ½ teaspoon of the low-fat cream cheese on each mini rice cake and top with 1 teaspoon of the peach mixture. Serve.
